Ingredients

  • Vegetables: 2 large English cucumbers, 4 large carrots, 1 red bell pepper, 1 yellow bell pepper, 1 cup cherry tomatoes, 1 cup sugar snap peas
  • Dip: 1 cup Greek yogurt (plain full-fat or low-fat), 2 tbsp fresh chives finely chopped, 1 tbsp fresh dill chopped, 1 tbsp fresh parsley chopped, 1 tbsp lemon juice, 1 small garlic clove minced, salt and black pepper to taste

Instructions

Step 1:
Wash all vegetables thoroughly.
Step 2:
Slice cucumbers diagonally into 1/4-inch thick ovals Arrange slices in overlapping rows to form a fan shape on a large serving platter.
Step 3:
Peel carrots then slice diagonally into thin ovals similar in size to the cucumber slices Arrange next to the cucumber continuing the fan pattern.
Step 4:
Cut bell peppers into thin strips Arrange them in sections beside the cucumbers and carrots for added color.
Step 5:
Place cherry tomatoes and sugar snap peas in clusters at the base or sides of the fan for visual contrast.
Step 6:
In a small bowl combine Greek yogurt chives dill parsley lemon juice minced garlic salt and pepper Mix well.
Step 7:
Spoon the dip into a small serving bowl and place it on or beside the platter.
Step 8:
Serve immediately or cover and refrigerate until ready to serve.
