# Method steps:
01 - Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - Combine granulated sugar, unsweetened cocoa powder, ground cinnamon if desired, and a pinch of salt in a small mixing bowl.
03 - Using a pastry brush, coat both sides of each tortilla with melted butter. Sprinkle the cocoa-sugar mixture evenly onto both surfaces.
04 - Stack the tortillas and slice each into eight equal wedges. Arrange the wedges in a single layer on the prepared baking sheet.
05 - Transfer chips to the oven and bake for 8 to 10 minutes, flipping midway through, until crisp. Allow chips to cool completely before serving.
06 - In a medium mixing bowl, combine diced strawberries, kiwi, pineapple, mango, and apple. Drizzle with fresh lime juice and honey or maple syrup. Add fresh mint if using and toss gently to evenly mix.
