# Method steps:
01 - In a medium mixing bowl, combine turkey breast, cheddar cheese, mayonnaise, Dijon mustard, diced red bell pepper, sliced spring onions, Cajun seasoning, smoked paprika, salt, and black pepper. Stir until thoroughly mixed.
02 - Evenly spread softened butter on one side of each bread slice.
03 - Arrange four slices of bread, buttered-side down, on a clean cutting board. Distribute the filling mixture evenly, spreading all the way to the edges.
04 - Top each portion with another bread slice, buttered-side up, forming sandwiches.
05 - Heat a large skillet or sandwich press over medium heat. Place sandwiches in the pan, in batches if needed, and cook for 3 to 4 minutes per side, gently pressing until golden and cheese is fully melted.
06 - Transfer hot toasties to a board, slice in halves or quarters, and serve immediately.
