# Method steps:
01 - Set your oven to 425°F (220°C) or prepare your grill to medium-high heat. Oil the grill grates if grilling.
02 - Brush the chicken breasts with olive oil. Sprinkle with smoked paprika, garlic powder, salt, and black pepper evenly across both sides.
03 - Grill or pan-cook the prepared chicken breasts over medium-high heat for 5–6 minutes per side, or until fully cooked. Allow the chicken to rest for 5 minutes.
04 - Slice or shred the cooked chicken. Toss with 2/3 cup BBQ sauce in a mixing bowl until thoroughly coated.
05 - Place the flatbreads on a baking sheet or directly onto the grill. Lightly brush the surface with olive oil.
06 - Distribute the BBQ chicken evenly atop the flatbread bases. Layer mozzarella cheese, red onion, red bell pepper, and optional jalapeño slices.
07 - Cook the assembled flatbreads in the oven or on the grill for 8–10 minutes, until the cheese melts and edges are crisp.
08 - Remove from heat. Drizzle with extra BBQ sauce and sprinkle with chopped cilantro. Season with freshly ground black pepper if desired.
09 - Cut into portions and serve immediately while hot.
